Today I bring to you the sweet pumpkin paratha or kaddu ka meetha paratha recipe for babies and kids. The main ingredient is pumpkin or kaddu which is usually a neglected vegetable in kid’s diet.

Parathas are comforting food for most of us and what if they are sweet! This recipe is a healthy and sweet twist to the usual breakfast dish. This paratha recipe stars the healthy pumpkin, jaggery along with the mighty desiccated coconut.

Parathas are versatile as a dish. One can add lentils, veggies, spices and get a completely different paratha dish based on the ingredients.

Sweet pumpkin paratha – preparation method:

This is a traditional recipe shared by mom-in-law. We often make it as a breakfast or dinner item. It can be teamed up with a spicy and tangy tomato based gravy, plain curd or as it is. This paratha is very soft and can also be served to  babies above 10 months of age.

Heat a pressure cooker/ kadai with ghee. Add pumpkin and let it cook well. Add jaggery, turmeric powder and desiccated coconut.

 

Cook until everything comes together. Meanwhile make the dough with whole wheat flour and a pinch of salt. Add the mixture to the dough. Roll out parathas and cook on tawa.

 Simple and easy paratha is ready 🙂

  • Pumpkin (peeled and diced ) - 1 cup
  • Jaggery – ½ cup
  • Ghee – 1 tbsp
  • Dry / Desiccated Coconut (grated) – 1 tbsp
  • Turmeric – ½ tsp
  • Whole wheat flour / Atta – ¾ cup
  • Salt to taste
  • Oil / Ghee - as required
Instructions
  1. Deskin and deseed the pumpkin. Dice the pumpkin into medium sized chunks
  2. Heat ghee in a pan and add pumpkin. Cover with a lid. Let the pumpkin cook for 5 to 6 minutes on a medium flame
  3. Add in the jaggery, turmeric and coconut. Let the mix cook for 4 to 5 minutes more on medium flame or until the pumpkin is soft. Do ensure the jaggery does not get burnt.
  4. For the making the dough - take whole wheat flour and add salt (approximately one pinch)
  5. Add in the cooked pumpkin mixture. Knead soft dough using the pumpkin jaggery mix. Do not add water.
  6. To make the paratha - take one ball and roll it out into a small round shape. Do this step very gently. Do dust the rolling table / surface with little flour to avoid the paratha from sticking.
  7. Cook the paratha on the tawa / pan on both sides . Each side will take approximately 2-3 minutes each. Add oil / butter / ghee as per your preference. One can add approximately 1 tsp oil on each side. Cook the paratha on a medium flame.
  8. Take paratha off the tawa and Serve.

Notes
  • You can add chilli powder, green chilli, garam masala powder and make it a sweet or spicy recipe
  • You can also use freshly grated coconut

      Dough depends on the moisture content of jaggery , pumpkin and how long you have cooked the pumpkin. you can sprinkle some water / milk and try to soften the dough. Hope you got soft parathas .

      It is not very difficult.

      Knead a soft yet firm dough & roll out the paratha gently. you can also roll out small parathas which are easier to handle.
