Serves: 2 cups
- Poha - 1 cup
- Milk – 1 tablespoon
- Curd – 1 cup
- Ginger – 1 teaspoon finely chopped
- Cucumber – 2 tablespoon finely chopped
- Cumin seeds – 1 teaspoon
- Freshly grated coconut – ½ cup
- Green chilies – 1 or 2 finely chopped
- Coriander leaves - to garnish
- Ghee – ½ tablespoon
- Salt – to taste
- First clean and wash poha in a sieve and let it rest for 10 minutes.
- Heat a pan with ghee and add cumin seeds. Once it sputters, add ginger and green chillies. Fry for a few minutes and switch off the heat.
- Take a bowl and add curd. You can add in milk next.
- Add in poha, grated coconut, salt and the tadka. Mix well.
- Add chopped cucumber and mix well. Garnish with coriander leaves.
